Perform 2 sets of stretch and folds, 30 minutes apart.

Let Rise.

Let the dough rise 7-10 hours at room temperature.

Shape the dough, place it into parchment paper and into a bowl. Let rise.

Bake

Bake at 450°F, covered for 20 minutes, uncovered for 30 minutes.

Allow the bread to cool on a wire rack before slicing.
