In a large bowl, whisk together the eggs, milk, brown sugar, vanilla, apple pie spice, and salt. Pour this mixture evenly over the bread cubes. Let it sit on the kitchen counter for 30 minutes to 1 hour so the bread can soak up the liquid. (If preparing ahead, cover and refrigerate overnight.)
Preheat your oven to 350°F (176°C).
While the bread is soaking up custard mixture, prepare the crumble. Add the melted butter, granulated sugar, and flour to a bowl. Mix together until clumps form.
