Blueberry and Goat Cheese Spinach Salad

This blueberry goat cheese spinach salad with honey mustard vinaigrette is fresh, tangy, and perfect for a quick and healthy meal.

Ingredients
 

  • 5 oz spinach
  • 1 romaine heart chopped
  • ½ small red onion thinly sliced
  • 4 radishes thinly sliced
  • 1 pint blueberries
  • 1 medium avocado diced
  • 4 oz goat cheese crumbled
  • ½ cup pistachios

Honey Mustard Vinaigrette 

  • ¼ cup olive oil
  • ¼ cup dijon mustard
  • 2 tablespoons honey
  • 2 garlic cloves minced
  • 3 tablespoons apple cider vinegar
  • salt and pepper to taste

Instructions
 

  • In a small bowl or jar, whisk together the olive oil, dijon mustard, honey, garlic, apple cider vinegar. Season with salt and black pepper to taste. If using a jar, seal the lid and shake until well combined.
  • In a large bowl, add the spinach and chopped romaine. Top with blueberries, radishes, pistachios, avocado, and red onion.
  • Drizzle a small amount of the honey mustard vinaigrette over the salad. Gently toss the salad to coat the salad lightly with the dressing. Add more dressing as needed. Top with crumbled goat cheese and serve.
