Ingredients
5ozspinach
1romaine heartchopped
½small red onionthinly sliced
4radishesthinly sliced
1pintblueberries
1medium avocadodiced
4ozgoat cheesecrumbled
½cuppistachios
Honey Mustard Vinaigrette
¼cupolive oil
¼cupdijon mustard
2tablespoonshoney
2garlic clovesminced
3tablespoonsapple cider vinegar
salt and pepperto taste
Instructions
In a small bowl or jar, whisk together the olive oil, dijon mustard, honey, garlic, apple cider vinegar. Season with salt and black pepper to taste. If using a jar, seal the lid and shake until well combined.
In a large bowl, add the spinach and chopped romaine. Top with blueberries, radishes, pistachios, avocado, and red onion.
Drizzle a small amount of the honey mustard vinaigrette over the salad. Gently toss the salad to coat the salad lightly with the dressing. Add more dressing as needed. Top with crumbled goat cheese and serve.
