Peach Arugula Salad with Balsamic Vinaigrette

The ultimate summer salad recipe made with juicy peaches, creamy goat cheese, crunchy pecans, velvety avocado, and tossed in a zesty homemade balsamic vinaigrette!

Ingredients
 

  • 5 oz arugula about 4 cups
  • 2 large peaches sliced
  • 4 oz goat cheese crumbled
  • cup pecans roughly chopped
  • ¼ cup fresh basil julienned
  • 1 avocado diced
  • 1 cup croutons

Balsamic Vinaigrette

  • 2 tablespoons balsamic vinegar
  • 2 tablespoon olive oil
  • 1 tablespoon honey
  • 2 teaspoons dijon mustard
  • 1 garlic clove minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • In a small bowl, whisk together the balsamic vinegar, olive oil, honey, dijon mustard, minced garlic, salt and pepper. Set aside.
  • In a large bowl, add the arugula, peaches, basil, pecans, avocado, and goat cheese.
  • Drizzle half of the dressing over the salad. Gently toss the salad to coat the ingredients with the dressing. Add more dressing as needed.
