Greek Cauliflower Rice

This greek cauliflower rice is a low carb version of greek rice pilaf, bursting with Mediterranean flavor. It's a light, healthy side dish.

Ingredients
 

  • 10 oz. bag of frozen riced cauliflower thawed
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 lemon

Instructions
 

  • Thaw the cauliflower rice by cooking in the microwave according to package directions. (Typically this is about 3-5 minutes in the bag.)
  • Heat the olive oil in a skillet over medium heat. Add the riced cauliflower and cook until it starts to brown, about 10 minutes. Stir occasionally.
  • Add the minced garlic, oregano, parsley, onion powder, salt, pepper and lemon juice. Stir and cook for 3-4 minutes.
  • Store leftovers covered in the fridge for up to 5 days.
