This Green Chili Corn Casserole is a delicious, sweet and savory holiday side dish that's super easy and quick to make!

Ingredients
 

  • 4 tablespoons butter salted or unsalted
  • 8 oz. cream cheese
  • ¼ cup milk
  • 2 (15 oz.) cans sweet corn drained
  • 1 (7 oz.) can diced green chilis
  • 1 teaspoon salt
  • 2 teaspoons dried parsley

Instructions
 

  • Preheat oven to 300°F.
  • In a heavy saucepan, melt butter, cream cheese and milk over medium heat. Stir until smooth and add the corn, green chilis, parsley and salt.
  • Stir to combine and pour the mixture into an 8" x 8" baking dish. Sprinkle with more parsley and bake for 30 minutes.

Store leftovers covered in the fridge for up to 4 days. Reheat in the microwave or in the oven at 350°F until heated through.
