Ingredients & Substitutions

- Spinach: Fresh and tender baby spinach leaves. If you prefer, you can use mixed greens or arugula instead.
- Romaine: Chopped for a crisp and crunchy texture. Iceberg lettuce will give the salad a similar crunch.
- Red Onion: Gives the salad a sharp and zesty bite. Alternatively, you can use green onions or shallots.
- Radishes: Thinly sliced for a peppery crunch. If radishes aren't available, cucumbers or bell peppers are great substitutes.
- Blueberries: Juicy and sweet, adding a burst of flavor. You can also use strawberries, raspberries, or blackberries for a different berry twist.
- Avocado: Diced for a creamy and rich addition. If you prefer, chopped hard-boiled eggs can be used instead.
- Goat Cheese: Crumbled for a tangy and creamy texture. Feta cheese or blue cheese are excellent alternatives.
- Pistachios: Adds a crunchy and nutty element. You can substitute pistachios with almonds, pecans, or sunflower seeds.
- Dressing: A honey mustard vinaigrette made with olive oil, Dijon mustard, honey, garlic, and apple cider vinegar for a sweet and tangy finish. If you don't like vinegar, use lemon juice in its place.
How to make Blueberry Goat Cheese Spinach Salad

Step 1: Make the honey mustard vinaigrette
In a small bowl or jar, whisk together the olive oil, dijon mustard, honey, garlic, and apple cider vinegar. Season with salt and black pepper to taste.
If using a jar, seal the lid and shake until well combined.

Step 2: Assemble the salad
In a large bowl, add the spinach and romaine. Top with blueberries, radishes, pistachios, avocado, red onion, and goat cheese.

Step 3: Dress the salad
Drizzle a small amount of the honey mustard vinaigrette over the salad. Gently toss the salad to coat the ingredients lightly with the dressing.
Add more dressing as needed, but be careful not to overdress.

Step 4: Toss and serve
Toss together and serve the salad immediately to enjoy the fresh, vibrant flavors and crisp textures.

Pro Tip
To keep the goat cheese in chunks, crumble it over the salad after you’ve tossed it.
Serve
This salad is great on its own or with grilled chicken or air fryer salmon. You can serve it as a meal or a side dish. For extra crunch, top with homemade sourdough croutons.
How to Store
Store the salad ingredients (spinach, blueberries, goat cheese, onions, etc.) in an airtight container and the honey mustard dressing in a sealed jar.
Refrigerate for up to 2 days. For best results, toss the salad with the dressing just before serving. Remember, it's best enjoyed fresh!
