This blueberry goat cheese spinach salad is packed with fresh, seasonal ingredients that make it super tasty and incredibly healthy.

How to make Blueberry Goat Cheese Spinach Salad

INGREDIENTS

  • 5 oz spinach

  • 4 radishes (thinly sliced)

  • ½ cup pistachios

  • ¼ cup olive oil
  • ¼ cup dijon mustard
  • 2 tablespoons honey
  • 2 garlic cloves (minced)
  • 3 tablespoons apple cider vinegar
  • salt and pepper (to taste)
