This method keeps it easy, ensuring your eggs come out perfectly cooked without turning into rubbery hockey pucks. It's my go-to when I want a no-fuss breakfast that hits the spot every time!
Ingredients

- Eggs: Any size egg will work; I usually opt for fresh large or extra-large pasture-raised eggs. Fresh eggs are best when cooking eggs for the best flavor.
- Cooking fat: I like to use butter for most egg recipes, but olive oil, avocado oil, ghee, or bacon grease are good substitutes for over-hard eggs.
- Seasoning: I like to keep it simple with just salt and pepper but you could sprinkle a variety of herbs and spices over the eggs before serving.
How to Make Perfect Over Hard Eggs

Step 1: Melt the butter
Melt the butter in a non-stick skillet or cast iron skillet over medium-low heat for about 2 minutes.
Medium-low heat is typically around 2.5-3 on a scale of 1 to 10, where 1 is the lowest setting and 10 is the highest.

Step 2: Cook the egg
Crack the egg on a flat surface and gently open it over the pan.
Using the tines of a fork, drag the yolk to break it. This will help cook the yolk and whites evenly without burning the egg.
Cook for 4-5 minutes.

Step 3: Flip the egg
Using a spatula, gently flip the egg and cook for an additional 1-2 minutes or until the yolk is completely cooked and the egg whites are set.

Step 4: serve
Gently slide the spatula under the egg, lift it from the pan, and place it on a plate to serve. Season with salt and pepper.

Cook slowly: Keep the heat medium-low to ensure the whites and yolk cook fully without burning.
Pierce the yolk: After adding the egg to the pan, use the tines of a fork to pierce the yolk. This helps it cook evenly and completely without burning the egg a ton.
Crack the egg gently: Crack the egg on a flat surface, then gently open it into the pan.
Use a thin, wide rubber spatula: To prevent scraping the pan, I always opt for a rubber spatula. Thin and wide ones are best for picking up the egg and flipping it over.
