Everyone's got their egg preferences, right? Whether you're into over-easy eggs, over-medium eggs, or sunny-side-up eggs, finding your perfect egg is key.

For days when you want something straightforward and foolproof, nothing beats the simplicity of over-hard eggs. They’re versatile and fit into various diets like gluten-free, dairy-free, keto, and paleo.

This method keeps it easy, ensuring your eggs come out perfectly cooked without turning into rubbery hockey pucks. It's my go-to when I want a no-fuss breakfast that hits the spot every time!

Ingredients

Eggs, sourdough toast bacon and butter on a table.
  • Eggs: Any size egg will work; I usually opt for fresh large or extra-large pasture-raised eggs. Fresh eggs are best when cooking eggs for the best flavor.
  • Cooking fat: I like to use butter for most egg recipes, but olive oil, avocado oil, ghee, or bacon grease are good substitutes for over-hard eggs.
  • Seasoning: I like to keep it simple with just salt and pepper but you could sprinkle a variety of herbs and spices over the eggs before serving.

How to Make Perfect Over Hard Eggs

A knob of butter melting in a skillet.

Step 1: Melt the butter

Melt the butter in a non-stick skillet or cast iron skillet over medium-low heat for about 2 minutes.

Medium-low heat is typically around 2.5-3 on a scale of 1 to 10, where 1 is the lowest setting and 10 is the highest.

Step 2: Cook the egg

Crack the egg on a flat surface and gently open it over the pan.

Using the tines of a fork, drag the yolk to break it. This will help cook the yolk and whites evenly without burning the egg.

Cook for 4-5 minutes.

Step 3: Flip the egg

Using a spatula, gently flip the egg and cook for an additional 1-2 minutes or until the yolk is completely cooked and the egg whites are set.

Pro Tips

Cook slowly: Keep the heat medium-low to ensure the whites and yolk cook fully without burning.

Pierce the yolk: After adding the egg to the pan, use the tines of a fork to pierce the yolk. This helps it cook evenly and completely without burning the egg a ton.

Crack the egg gently: Crack the egg on a flat surface, then gently open it into the pan.

Use a thin, wide rubber spatula: To prevent scraping the pan, I always opt for a rubber spatula. Thin and wide ones are best for picking up the egg and flipping it over.

How to serve perfect over hard eggs

I love pairing these perfect over-hard eggs with classic breakfast sides like crispy bacon, sourdough toast, or maple turkey sausage.

They're perfect for adding to breakfast sandwiches, such as sourdough bagels or English muffins, without worrying about spilled yolks.
