This quick and easy recipe for blistered cherry tomato toast comes together on your stovetop in minutes!

The sweet flavor of tomatoes, seared in olive oil and a dash of balsamic vinegar, pairs perfectly with creamy ricotta and salty Parmesan cheese.

Spread the two together on toasted sourdough for a delicious meal or snack.

Ingredients needed

  • sourdough bread
  • cherry tomatoes
  • olive oil
  • garlic
  • balsamic vinegar
  • fresh basil
  • salt/pepper/cracked red pepper
  • ricotta cheese
  • parmesan cheese

How to make blistered cherry tomato toast

Mix the ricotta and Parmesan cheese in a small bowl and set it aside.

Wash the tomatoes and cut them in half to help them cook faster.

Heat the olive oil in a skillet over medium heat. When the oil is hot, add the tomatoes. Stir and cook until they soften, about 5 minutes. Add garlic and cook until fragrant for about 2 minutes.

Add balsamic vinegar, salt, and cracked red pepper. Stir and turn off the heat.

Toast the sourdough bread to your liking. Spread ¼ cup of the cheese mixture on each slice.

Top with cherry tomatoes and sprinkle fresh basil.

Amy's Tips

  • I like to cut the tomatoes in half before adding them to the skillet to help them cook faster. This step also prevents the tomatoes from bursting and making a mess on the stovetop.
  • You can prepare each part of this recipe in advance and store them separately in the fridge for up to 5 days.
  • For a simple party appetizer, cut a baguette into one-inch thick slices for bite-sized servings.
  • This dish is versatile and can be served either cold or at room temperature.

    INGREDIENTS

    Ricotta Spread

    • 1 cup ricotta cheese
    • 2 tablespoons grated parmesan cheese

    Blistered Cherry Tomatoes

    • 2 tablespoons extra virgin olive oil
    • 1 pint cherry tomatoes
    • 4 cloves fresh garlic cloves (minced)
    • 2 tablespoons balsamic vinegar
    • ¼ teaspoon sea salt
    • teaspoon cracked red pepper
    • fresh chopped basil

    INSTRUCTIONS

    • In a small bowl, combine the ricotta and parmesan cheese and set aside. Wash the tomatoes and cut them in half.
    • Heat the olive oil in a skillet over medium heat. Once the oil is hot and shimmering, add the tomatoes. Cook while stirring until the tomatoes start to soften, about 5 minutes. Add the garlic and cook until fragrant, about 2 minutes. Add the balsamic vinegar, salt, and cracked red pepper and stir. Turn off the heat.
    • Toast sourdough bread to desired darkness. Spread ¼ cup of the cheese mixture onto each slice. Top with cherry tomatoes and sprinkle with fresh basil.
