- cherry tomatoes

How to make blistered cherry tomato toast
Mix the ricotta and Parmesan cheese in a small bowl and set it aside.
Wash the tomatoes and cut them in half to help them cook faster.
Heat the olive oil in a skillet over medium heat. When the oil is hot, add the tomatoes. Stir and cook until they soften, about 5 minutes. Add garlic and cook until fragrant for about 2 minutes.
Add balsamic vinegar, salt, and cracked red pepper. Stir and turn off the heat.
Toast the sourdough bread to your liking. Spread ¼ cup of the cheese mixture on each slice.
Top with cherry tomatoes and sprinkle fresh basil.

- 4 slices sourdough bread
Ricotta Spread
- 1 cup ricotta cheese
- 2 tablespoons grated parmesan cheese

- 2 tablespoons extra virgin olive oil
- 1 pint cherry tomatoes
- 4 cloves fresh garlic cloves (minced)
- 2 tablespoons balsamic vinegar
- ¼ teaspoon sea salt
- â…› teaspoon cracked red pepper
- fresh chopped basil
INSTRUCTIONS
- In a small bowl, combine the ricotta and parmesan cheese and set aside. Wash the tomatoes and cut them in half.
- Heat the olive oil in a skillet over medium heat. Once the oil is hot and shimmering, add the tomatoes. Cook while stirring until the tomatoes start to soften, about 5 minutes. Add the garlic and cook until fragrant, about 2 minutes. Add the balsamic vinegar, salt, and cracked red pepper and stir. Turn off the heat.
