It's creamy and sweet, with that little hint of green chili in the background. Put it together in no time, and it doesn't take up much room in the oven on turkey day!

Ingredients

  • sweet canned corn
  • diced green chilis
  • butter
  • cream cheese
  • milk
  • salt, pepper and dried parsley

How to make green chili corn casserole

Melt the butter, cream cheese and milk in a heavy saucepan over medium heat and stir until smooth.

Add the corn, green chili, parsley and salt. Stir to combine everything.

Pour into an 8" x 8" baking dish, sprinkle the top with more parsley and bake at 300ยฐF for 30 minutes.

INGREDIENTS

  • 4 tablespoons butter (salted or unsalted)
  • 8 oz. cream cheese
  • ยผ cup milk
  • 2 (15 oz.) cans sweet corn (drained)
  • 1 (7 oz.) can diced green chilis
  • 1 teaspoon salt
  • 2 teaspoons dried parsley

INSTRUCTIONS

  • Preheatย oven to 300ยฐF.
  • In a heavy saucepan,ย meltย butter, cream cheese and milk over medium heat.ย Stirย until smooth andย addย the corn, green chilis, parsley and salt.
  • Stirย to combine andย pourย the mixture into an 8" x 8" baking dish.ย Sprinkleย with more parsley andย bakeย for 30 minutes.ย

  1. Could I make a larger batch and freeze for quick reheating at another meal? Would the milk and cream cheese freeze well?

  4. I've been making this recipe for years - the family all loves it! If you ever get the chance, I highly recommend trying it with world-renowned Hatch green chile! Fresh is best, but frozen (thawed before use) works well also. Just stumbled onto your site looking for an actual recipe for a co-worker, and we have a few things in common!
