Ingredients
- sweet canned corn
- diced green chilis
- butter
- cream cheese
- milk
- salt, pepper and dried parsley
How to make green chili corn casserole
Melt the butter, cream cheese and milk in a heavy saucepan over medium heat and stir until smooth.

Add the corn, green chili, parsley and salt. Stir to combine everything.

Pour into an 8" x 8" baking dish, sprinkle the top with more parsley and bake at 300ยฐF for 30 minutes.

That's all there is to it folks, it's really that simple.
Store any leftovers covered in the fridge for up to 4 days. This casserole can be reheated in the microwave or in the oven at 350ยฐF until heated through.

Very easy and quick to make. Made it in the morning and took to a potluck lunch. There were no leftovers!
can frozen corn be used?

Could I make a larger batch and freeze for quick reheating at another meal? Would the milk and cream cheese freeze well?
Yes you can. There will probably be some separation but just stir and it should come together.
This is delicious! Love this recipe. What do you think about adding all the ingredients to a crockpot at once and letting it cook for a few hours?

I've been making this recipe for years - the family all loves it! If you ever get the chance, I highly recommend trying it with world-renowned Hatch green chile! Fresh is best, but frozen (thawed before use) works well also. Just stumbled onto your site looking for an actual recipe for a co-worker, and we have a few things in common!
